Sucralose is a zero-calorie sugar substitute that is derived from sucrose, or common table sugar. It is made through a multi-step process that involves the chlorination of sucrose molecules. This process replaces three hydroxyl groups on a sucrose molecule with three chlorine atoms, resulting in a compound that is 600 times sweeter than sugar. Sucralose was first discovered in 1976 by researchers at Queen Elizabeth College in England. It was approved for use in the United States in 1998 and has been used in a wide range of food and beverage products ever since.
