Also referred to as the Sour cherry, the Dwarf cherry is a member of the Rosaceae family. Its major bioactive components include flavanols, catechin, epicatechin, and procyanidins B1 and B2. Tart cherries are renowned for their strong antioxidant abilities, shielding the body from the detrimental effects of oxidative stress. Nutritionally rich, these berries provide essential carbohydrates, proteins, and minerals such as copper, potassium, manganese, magnesium, and iron. Additionally, they are a valuable source of vitamins, particularly vitamins A and the B series.

Tart cherries, are typically grown in colder climates such as the Great Lakes region in the United States, Canada, and Eastern Europe. They are also cultivated in parts of Asia, including China and Iran. These trees require a cool climate for optimal growth and tend to thrive in well-drained, loamy soil.The production process for tart cherries begins with planting the trees in the early spring. It takes about 3-4 years for the trees to reach full production, with each tree producing about 50-100 pounds of cherries per year. The harvesting season for tart cherries typically occurs in late June to early July.The cherries are then picked by hand or by using a mechanical shaker, which gently vibrates the tree and causes the cherries to fall from the branches. The cherries are then sorted and cleaned before being transported to a processing facility.
