Also known as Cacari and Camocamo, Camu camu is a small bushy plant found in Peru and Brazil. It bears red or purple coloured berry like fruits that become maroon or purple-black when ripped and feature either sweet or acidic flesh. These fruits have a high content of Vitamin C and are also rich in flavanoids like anthocyanins, flavanols, catechin, ellagic acid, cyanidin, rutin, etc. It also contain good amout of potent antioxidants.

Camu Camu is grown on trees that can reach up to 20 feet in height and are found in flooded areas along rivers and in swamps. The trees bear fruit twice a year, with the peak season being from December to April. The fruit is handpicked by local farmers and is then carefully processed to preserve its nutritional value.
The fruit is usually freeze-dried or processed into pulp or juice. Freeze-drying involves quickly freezing the fruit, followed by placing it in a vacuum chamber where the ice crystals are removed through sublimation, leaving behind dried fruit. This method helps to retain most of the fruit's nutrients. Some processors also use low-temperature drying techniques to preserve the fruit's flavor and nutritional value.
