Also known as slender amaranth or green amaranth which belongs to the family Amaranthaceae. This herb is native to North and Central America. Flavonoids, phytates, squalene, and phenol are the bioactive components present in these seeds. The Amaranthus seed is rich in vitamins such as vitamins A, C, E, K, B5, B6, folate, niacin, and riboflavin and minerals like calcium, iron, and manganese. Gallic acid, p-hydroxybenzoic acid, and vanillic acid-like potent antioxidants are present in these seeds.
