Isomaltulose is a carbohydrate used as a sugar substitute in various food and beverage products. It is obtained from sugar beets or sugarcane. The sucrose is then enzymatically converted to isomaltulose using specific enzymes under controlled conditions.

During the process, the sucrose is treated with the enzyme, which rearranges the glucose and fructose units to form isomaltulose. The mixture is then purified to remove any impurities, involving steps such as filtration and drying to obtain pure isomaltulose in the form of a white crystalline powder.
