Phenylpropanoid derivatives: trans-anethole and estragole, alpha-phellandrene, limonene, fenchone, and alpha-pinene are the major active components of fennel seeds. It is a good source of vitamins like vitamins A, B1, B2, B3, C, E, and K and minerals like Calcium, Magnesium, Zinc, Potassium, Selenium, and Iron. These seeds are a good source of powerful antioxidants like polyphenols.  It is associated with many health benefits.

The production of fennel begins with planting seeds in well-drained, fertile soil, often in regions with a temperate climate. Fennel thrives in full sun and requires regular watering during the growing season. Farmers typically sow fennel seeds directly into the soil, spacing them adequately to allow for proper growth and airflow.
Harvesting fennel involves two primary parts of the plant: the seeds and the bulbs. Fennel seeds are harvested when the flower heads turn brown and dry, typically in late summer to early fall. The seeds are collected by cutting the flower heads and allowing them to dry further before threshing to separate the seeds from the chaff. Fennel bulbs, on the other hand, are harvested when they are fully grown but still tender, usually in late summer. The bulbs are carefully pulled from the ground, ensuring they remain intact and free from damage.
After harvesting, the fennel seeds are cleaned to remove any debris or impurities and are then dried in the sun or using mechanical dryers to reduce moisture content and preserve their aromatic qualities.
