Codonopsis also known as "dang shen" or "poor man's ginseng," is a perennial herb native to East Asia, particularly China, Korea, and Japan. The production of codonopsis begins with cultivating the plant in well-drained, fertile soil with a neutral pH. The plant thrives in cool, mountainous regions where it is often grown on terraced fields to prevent soil erosion and optimize growing conditions. Farmers propagate codonopsis through seeds or root cuttings, and the plants are spaced to allow sufficient growth and airflow.

Harvesting codonopsis roots typically takes place in the autumn, after three to four years of growth when the roots have reached optimal size and quality. The roots are carefully dug up by hand to avoid damage, as the delicate roots can easily break. The harvested roots are then cleaned to remove soil and impurities.

After harvesting, the roots are typically sliced and dried in the sun or in drying rooms to preserve their beneficial compounds. The drying process is crucial, as it reduces moisture content and prevents spoilage. Once dried, the roots are often further processed into various forms, such as powders, slices, or extracts, depending on their intended use.
