Used as spices in Asian countries, celery seeds are small dark brown colour seeds. It is native to India and belongs to the family of Umbelliferae. It contains d-limonene, selinene,3-n-butylphthalide, sedanenolide, and sedanonic anhydride. It also contains fatty acids, volatile essential oils, vitamins, and minerals such as potassium, magnesium, and calcium. It is also known to be rich in antioxidants.

Major componentsCelery is rich in beta-carotene, folic acid, vitamin C, magnesium, potassium, silica, sodium, chlorophyll, and fiber and contains 95% water [1].
Other constituentsEssential oil contain delta limonene, salience, various sesquiterpene, and characteristics flavour found in celery [1]. The essential oil of celery leaves, stem and seeds consists of sesquiterpene, alcohol (1 to 3%) and fatty acids. The components present in this plant are camphene, limonene, sedanenolide, stearic acids, linoleic acid, santalol, oleic acid, terpinene, p-cymene, myristic acid, myristoleic acid, sabinene and terpinolene etc. Celery seed consists of mostly frocoumarin, selinene (10%), frocoumarin flavonoids, glycosides and limonene [Fig. 4][2].

Description
Apium graveolens is a biennial, branching herb, height of about 100 cm, have solid fleshy stems and branches. The spice has pungent taste and pleasant characteristic aroma. All parts of this plant have been used for homemade remedies and used as flavouring agents in food industry [2].
