Calcium ascorbate, also known as calcium ascorbate dihydrate, is a chemical compound made from ascorbic acid (Vitamin C) and calcium carbonate. It is generally produced through a process called neutralization, where ascorbic acid is reacted with calcium carbonate in aqueous solution. The resulting calcium ascorbate is then filtered, dried, and milled into a fine powder. The primary source of calcium ascorbate is corn starch, which is fermented to produce L-sorbose, a key intermediate in the production of ascorbic acid. Ascorbic acid is then reacted with calcium carbonate, which is typically derived from limestone or shells of marine organisms. Other sources of calcium ascorbate include synthetic production methods and the fermentation of glucose derived from beets.
