Bromelain is a type of enzyme called a proteolytic enzyme found in pineapple (Ananas comosus) and is most commonly extracted from the stem and fruit of the plant. It is also found in smaller amounts in the juice and leaves. The production of bromelain starts with the harvesting of the pineapples, which are typically grown in tropical regions such as Brazil, Thailand, and the Philippines. Once harvested, the pineapples are peeled and the fibrous core or stem is separated from the fruit. This stem is then crushed and the extracted juice is filtered through a centrifuge to isolate the bromelain enzymes.The extracted bromelain is then purified and concentrated through a series of filtration and precipitation steps. This process removes impurities and results in a highly potent and pure form of bromelain.
