Also known as Sunchoke, Sunflower species belongs to the family Asteraceae. It is native to North America. The major active component present in this root is inulin. Inulin is a soluble fiber that acts as a prebiotic. It has a quite good amount of nutritional value that contains protein, carbohydrate, and fiber. It also contains vitamins like vitamin B, C, and minerals like iron, copper, magnesium, phosphorus, potassium, and calcium. This root also contains a good number of antioxidants that neutralize the harmful effect of free radicles. Intake of Jerusalem root is good for the gut, circulatory system, and immune system.
