Harvesting typically occurs about 10 to 12 months after planting, when the arrowroot plants reach maturity. Once harvested, the arrowroot rhizomes are washed, peeled, and grated to separate the starch from the fibrous material. The grated rhizomes are then soaked in water, allowing the starch to settle at the bottom of the container. The starch is collected, dried, and ground into a fine powder.
